Does the salad feel tricked when mixed nicely with some chickpeas?Even if it does or doesn’t, you can trick your mind and appetite to savour some healthy salad snack with succulent pieces of protein filled chickpeas. Ideal for an afternoon snack or side dish or even full meal lunch for those of you consciously makes an effort to eat healthy like me, this dish is a chick’s play.
No Tricks Chick Peas Salad
This 15 minute chickpea salad recipe with lemon, fresh parsley, cucumber and sweet tomatoes that’s easy to make and can be made in advance.
Ingredients I used:
250gm Chickpeas, soaked overnight and then boiled to perfection (you can use readymade can)
1 Cucumber (medium), cut into small cubes
Parsley, fresh (you can use dill or coriander alternatively)
2 Tomatoes (small), cut into small cubes
Handful of Olives (You can use Feta cheese alternatively)
1 tablespoon honey
2 tablespoon Lemon juice, fresh
Salt and freshly ground black pepper to taste
1 tablespoon olive oil, extra-virgin
Lets make now
In a large bowl, combine the chickpeas, cucumber, tomato, parsley, olive oil, lemon juice and salt and pepper to taste. Add honey and olives. If you are using feta cheese, add them at this stage. Mix them all together. Taste and adjust seasoning.
Serve immediately or keep it in the fridge for a while if you prefer your salad cold.
Top tip: To add more flavours, you can either add Dijon mustard or balsamic vinegar to the salad.
