This lemon pepper chicken with ginger,
Will put your eager to hold finger
In excessive culinary danger
Of licks, burps and slurps for hours to linger!
No rhyme or reason, this amazingly simple, healthy and delightful chicken preparation makes magic as soon as lemon meets pepper and both greet chicken in their mix to join the mix of onion, butter and yoghurt. But when ginger joins the party, it gets hot and fiery. Why not try out tonight this dish and put your fingers and mouth to a different use than usual?
Top tip: You can adjust the amounts of ingredients to your preference. Serve with freshly cooked rice or if you are like me, with grilled mix-vegetables.
Ingredients I used
4 tablespoons extra virgin olive oil or I used 50gm butter
1 (800 gm) whole baby chicken, cut into pieces
2 medium sized onion chopped
3 tablespoons ginger cut into slices
2 tablespoons yoghurt
2 teaspoons black peppercorns, coarsely crushed
1/2 teaspoon salt and 1 teaspoon garlic paste
1 large fresh lemon juice squeezed

Step one: Marinate the chicken pieces in garlic paste. Leave for 10 minutes.
Step two: Heat butter over medium-high heat in a large fry pan. Add the black pepper and sliced ginger to it. Add the marinated chicken pieces. Lightly brown the chicken on all sides in the oil.
Health tips: You may use extra virgin olive oil instead of butter if you want to keep the calories down.
Step three: Turn heat to low, then stir in the onion, yoghurt and salt. Cover and simmer for 15 minutes.
Step four: Pour in the lemon juice and turn the pieces of chicken over. Cover and continue cooking until the chicken is done, about 15 minutes more. The water released from the chicken should be enough to cook this. So, I didn’t use any water as I prefer this preparation to be almost dry with little juices produced from the onion, butter and yoghurt. But if you prefer a little more gravy, adding additional water is necessary.
