Spoon & Sip Sunday Special Spinach Soup


Sadly it has been proven that although the famous cartoon character Popeye was so fond of spinach as this magical green vegetable being synonymous to his muscle growth, it was unfortunately due to a misplacement of a decimal that showed the wrong amount of iron in it. Whatever Popeye thought of spinach and devoured more of it or not, you can always pop your lazy eyes on a Sunday to spin the spoon around some creamy spinach and potato soup to make your weekend meal special.

A vibrant green blended soup with half-fat crème fraîche that’s healthy and filling – make a batch and freeze.

Serves: 4  Preparation Time: 10 Minutes Cooking time: 15 minutes

Ingredients I Used:

25g butter
1 large onion (you can use a bunch spring onions), chopped
1/2 teaspoon ground black pepper
Salt to taste
1 small potato (about 200g), peeled and diced
1l stock (made with two chicken or vegetable stock cubes)
2 x 200-235g bags spinach
150g half-fat crème fraîche

Lets make now

Step one: Heat the butter in a large saucepan. Add the onions and potato. Stir and put on the lid. Sweat for 10 minutes, stirring a couple of times.

Step two:Add the spinach and cook for a couple of minutes until wilted. Use a hand blender to blitz to a smooth soup.

Step three: Pour in the stock and cook for 10 – 15 minutes until the potato is soft.

Step four: Stir in the crème fraîche. Reheat and serve hot.
