Best prepared inside muffin tins, the delicious mouthfuls will keep your tiny-tots and grown-up-tots coming back for just one more!
Ingredients I used:
4 Cups Grated Courgette/ Zucchini (2 large)
1 Small Onion, finely chopped
1 Cup Shredded Cheddar
1 Cup Grated Parmesan
Salt & Pepper

Step one: Preheat the oven in 180 degree C.
Step two: Grate the courgette and squeeze out as much water as you can. It’s surprisingly a pretty watery veggie. The more water you get out, the crispier yours tots will turn out.
Top tips: Use a tea towel or a paper towel to squish and absorb the water.
Step three: Add all ingredients into a large bowl. Stir well.
Step four: Brush a mini muffin tin with some butter, alternatively you can spray with a non-stick spray. If you don’t have a muffin tray, you can alternatively make small round shapes with hand and place them on a baking sheet.
Step five: Fill the muffin tin the mixture, and bake for 15-20 minutes or until the tops have turned golden brown.
Step six: Use a butter knife or rubber spatula around the edges of each tot to remove them from the muffin tin.
Step seven: Serve hot immediately with some sour cream and lemon wedges on the side.
Portions are perfect for small bites. No one can have just one! Bake, dip, hurrah!
