Now if that ‘someone’ is replaced with ‘salmon’ the cooking story can very well become
“You need salmon to love you,
You need salmon to hold you tonight
salmon to love you, salmon to love you”
Well no fishy love story here, but just a simple salmon tale of a meal which gets too delicious when in vicinity of some lemon, garlic and herb strewn over it. Is this the love story of a salmon? May be not, its your story of how to prepare this salmon meal for that special ‘someone’? Salmon for someone? Why not?
Ingredients I used:
2 Salmon fillets
A bunch of Dill, fresh
1 Garlic Clove, minced
1 Lemon, zest of
1 Tablespoon Parsley, fresh
Salt to taste
Dash of black pepper
2 Tablespoon Olive oil
2 Small cube of butter
Lets make now
Step one: Place all ingredients except for salmon in a small bowl and melt in the microwave for 30-45 seconds
Step two: Stir until combined
Step three: Place the salmon fillets on a parchment lined baking sheet or aluminium foil
Step four: Using a pastry brush, coat the salmon fillets with lemon herb butter, evenly spreading it over the tops of the fillet
Step five: Bake in an oven preheated to 180 degrees for 10-12 minutes, or until salmon is cooked through and flakes easily with a fork.
Serve immediately with some roasted baby potatoes and asparagus on the side.
(Note: I have roasted the baby potatoes and asparagus in the same lemon herb butter mix for 5 minutes, just boil the potatoes before roasting)
