For not only those who are endowed with uber genes but also for those having sober means, aubergine has a surprisingly simple twist in the way it can tell its cooking story. Especially with a layer of melted cheese on its baked slices can result in an uber delicious vegetarian dish for you to devour.
Top tip: Choose a glossy, plump aubergine to make this warming vegetarian main course.
Preparation time: 5 Minutes Cooking time: 25 Minutes
Ingredients I used:
2 Tablespoon olive oil
1 Aubergine, halved lengthways
1 Ball mozzarella(150g), drained
Handful basil leaves
Lets bake now
Step one: Heat oven to 200/fan 180c/gas 6. Drizzle the oil over the aubergine and bake in the oven for 25 minutes until softened.
Step two: Meanwhile slice tomatoes and mozzarella, then arrange on top of the aubergine. Return to oven for another 5 mins or until the cheese has melted.
Step three: Scatter over some basil leaves. Serve with couscous on the side.
